Aren't you nice. But I must say Penni was tres cool too. She really tried to use reason, but alas and alack it was in vain. And Janice is our street fight'in sister. Super web girl, to the rescue. CGB, the lovely lady who started this thread, waded into the fray to defend her baby, this thread, even though we could all tell she was very uncomfortable over there. We are all soooo cool! You can be cool to, just hang out with us. Can I say us, Penni, Janice and CGB? I haven't been here all that long but I feel like an "us."

Now as per your very nice request:

Tofu Enchiladas

2 lrg onions - chopped medium fine
1-2 green peppers chopped fine
1/4 C oil
1 1/2 C tofu (firm) mash
pepper salt
1 TBS chili powder (or more to taste)
1 can black olives, chopped
12 tortillas
1 1/2 C corn
1 1/2 cup enchilada sauce, heated
1 C cheese grated (I use Healthy Choice Cheddar)

Saute veggies in oil till onions are clear. Add tofu, pepper salt, chili powder and cook till tofu is fairly dry. Cool. Stir in olives. Soften tortillas, steam or heat in grease - I steam. Fill with 2-3 TBS of tofu mix and roll. Arrange in baking dish and sprinkle corn over top, then pour on sauce, then sprinkle cheese. You can eat them now, or microwave to melt cheese and make exra hot. Just heat 'till
cheese melts.

You can use store bought enchilada sauce or make your own:

Mix and simmer a few minutes

2 C tomato sauce
1 TBS vinegar
1 TBS chili powder or tabasco
minced cilantro (if you like it)
