Most cases of food poisoning are never diagnosed. They are just written off as the flu or a virus. I believe the thinking now is that on average people get mild food poisoning 2-3 times a year. I read a lot of journals and I cannot remember where I read this. It might have been as high as four cases a year. I got sick after a party I attended where homemade mayonnaise was used in a potato salad. Many other party goers also became ill. It could have been the handling of the mayonnaise, in that it was allowed to sit out for too long, or the eggs could have been contaminated. The only way to tell would have been to have the salad tested. I followed the E-coli outbreak, here, and there have been several outbreaks of that as well as of listeriosis in foods such as unpasteurized cheeses.

I'd just rather be safe. I'm sure you can tell from my posts I'm not much of a risk taker.
