To the best of my knowledge, short interest is compiled once a month by the exchanges and published around 15 of the month for NYSE stocks and around 25th for NAZ and AMEX in the WSJ.

Probably, that is why they are, generally, called Jan short interest or December (by the month, not by week or day).

Now, your one site is showing Dec 15 short interest that is correct. However, the other site shows Jan 8, which does happen to be the short interest published in WSJ on Jan 15th. Please note that the site was updated on Jan 29.
