Love sushi too. I live near a large Toyota plant and so we have
a few very good sushi bars. Otherwise, its fast food city, like
most of middle America.

I cook a lot myself, and have mastered the art of the low fat creamy sauce or low fat gravy. Small amount of Canola oil, flour, nonfat milk, defatted chicken broth, etc.

And I make low fat tamales out of chicken breasts, masa harina, corn husks, with non-fat tomatillo sauce. And beans and rice with eggplant and Adobo sauce.

And steamed Tilapia in a broth of ginger, miso, garlic and hot peppers, with rice noodles, carrots, green onions, and very thin
mushroom slices.

Springtime around here and you can go out in the country and on the banks of streams you can (sometimes) find morel mushrooms. Once found one as big as my fist. They are among the best tasting fungi in the world.

Also, a southern thing, is poke salet. This is a common weed which
yields poison purple berries which the birds love and shit on the cars.
However, in early spring, the young leaves and stalks can be eaten and they are quite good, excellent in fact. You must eat them in the early spring or the plant is poison, however.

Thus to eat low fat is not to go without.
