Don't scoff at Escoffier. He is out of date as the stoves he cooked on were fired by wood. The ingredients are good but the methods are passe. Try Jacques Pepin for today's scoff Francais. The French developed good sauces and cooking techniques partly because their food sources were poor. Reality is pan fried and poached seafood is a staple of their diet as in England. The English never developed haute cuisine because their farming produced high quality meats and produce and they lived off the sea to a large degree. Besides anything Fr. they would not be too keen on since the invasion. Saxons ate with the dogs for centuries.

You would think since the English controlled the spice trade that they would have the cuisine to go along with it. Not so. Perhaps that is another reason why the Fr. had to be more creative.

When you QTR annouces their takeover of Planet Hollywood you will see that this all so germane to this thread.
