I see you are a tug boat pilot, did you pilot on the Mississippi? What kind of license do you have? I think piloting a boat is an impressive accomplishment, I know it is hard work and demands a lot of skills. If you are out in a boat all day, or even for weeks, of course you have to cook, at least someone does. I thought about being a cook on a tug boat back when I was a kid, but some men told me that the women who did it were prostitutes, so I backed off. Later someone else told me that wasn't true.
I like Oak Grove stuff, too, but we eat brown rice, so I don't buy it. I have used it when I cooked for other people. I guess I cheat a little, too, I use Tony Chacere's a lot.
Where in Texas are you? Must be east Texas if you can catch your own crawfish. Galveston? Houston? There are some nice fish houses in Baton Rouge, I like a place on Scenic Highway, I think the name is Tony's. And there is one in Port Allen, can't remember the name. I can't remember if they purge the crawfish, I suppose they do if you buy them pre-cooked. If you get live ones, you can purge them in the bathtub, or in a tub out in the yard.
I used to like to catch crabs, too, my grandmothers lived in Biloxi on the back bay, and we caught them on the pier. The water was brackish, I think brackish water makes for the best crabs. We live not too far from the Chesapeake, but I have never been crabbing here. We just go to a crab house and let someone else do the work. It isn't as good as homemade, though, is it?
Whenever I have more shrimp than I can cook, I freeze them in a milk carton, just put them in and fill it with water and freeze it. I don't know how that would work for long term, but it works pretty good for a few months. I used to know people who caught shrimp, when I lived in Louisiana, but here I don't.
I do like to learn new things every day, that's why I am on SI every day, I am learning how to invest my money, that's something I did not know how to do, and still don't, really.<g> |
