Champagne is something I've grown to love. I didn't like it at first - but then again I didn't have access to anything good. The domestic stuff is largely flawed - those funny tastes you mention. Like a TV picture with ghosts.
French Champagne comes in distinct quality bands. The old satndby, Moet non-vintage, is something for which I won't go out of my way. There are similarly-priced nonvintage Champagnes from smaller houses which make some very engaging juice. But where I really sign on is with the top-drawer vintage brands, like Grande Dame or Roederer "Grande Annee". Jacquesson makes a lovely Champagne, but you won't find it at Safeway. The best source I know is the Rare Wine Company in Sonoma.

Really good Champagne tastes good from start to finish. Butter cookie, hint of milk chocolate, often an orangey note. In fact a big old Champagne often smells and tastes like "Orange Milano" cookies to this palate - only better.
