COLCANNON [Mashed Potatoes with Cabbage] . . . . Looks like green mashed potatoes, but without the yucky food coloring.

Boil a pot of potatoes [I like them best with skins on, personally]
After they are about half done, break up and toss in 1 or 2 cabbage heads [depending on size] and allow the two to boil together. Carefully strain and set in a very large mixing bowl. Use a hand masher to mix the two. Toss in a stick of butter [margarine is actually worse for you than butter and tastes like plastic]. Salt and pepper, then mash by hand. Salt and pepper again to taste.

Is not meant to be creamy, so some lumps are fine.

Can be served with various meats [last night I served it with turkey meatloaf], made just like regular, but with far more healthy and lean ground turkey. Goes fine with corned beef, etc. Stew would be odd, as both have potatoes. And the leftovers are great. . .or they can be fried into potato pancakes or mixed with eggs in some creative way.
