Easiest, tastiest, chicken recipe I ever did make. (courtesy of Marcella Hazan)

Lemon Chicken

Take a whole chicken, wash well, then dry
Roll a coupla lemons on the counter to loosen the juice
Prick lemons all over with a fork, toothpick, or something
Salt and Peppa (ooh baby baby, ooh baby baby) the bird inside and out.
Put the lemons inside the bird, then seal the cavity with skewers or thread and truss the legs.
Put the bird in an oven-proof dish, then into a pre heated 350 oven
Bake for 25 minutes, then turn over and bake a few more till golden

That's it. The bird self bastes, and is very moist and tender.

Cut up into pieces, then spoon over some of the lemon drizzlins from the pan.

Oh my, it's good!

But not as good as a thick, creamy, mango lassi.

Mango lassi, mango mango lassi . . .
