Obviously if you have six fabs, your overall output will be more stable. It's just like the stock market--if you build a diversified portfolio around a given targeted return, your volatility will be lower than if you buy just one stock with that same targeted return. Not to mention the fact that Intel can have 6x the number of fabs tweaking their process at any given time--not a bad little advantage to have.
