Since I see there are some Irish aboard today, here is a link to an ethnic recipe I gave my thread on St. Patty's Day. . .funny how it never caught on in America, then again. . I was making my own pesto in 1985, so maybe it will catch on. . .copied from memory. . may have left out something from recipes I learned from, but I think it is best when made simple:

Also less fat than mashed recipes. AND, have you tried variations on this same theme? Try mashing some sweet potatoes in with regular. . .or how about some brocoli? . . .or carrots? or onions? or make a mix of the above. . .

I have made a pate, using several different mashes. . an orange one with sweet potatoes . . . and green one with brocoli/potatoes and a white one with onion/potatoes, then layer them in a long tall baking dish [like meatloaf] one on top the other. . . it could be covered in a pastry dough, if you want to get fancy. Bake at such and such for about so long.

Serve warm. A slice shows the red, white and green colors and has a terrific combination of flavors as well. Be creative.
