Used to watch a cooking show out of Louisiana. One day the guy was going to cook malladocks. I had never heard of malladocks so I watched. He showed a film clip of a lake and pointed out the malladocks swimming there. He was talking about mallard ducks but he still was a little off, the ducks in the film clip were teal. He cooked everything the same way. Start with butter flavored oil and add flour to make a roux, brown, add ownyouns, green pepper, celery, garlic, green ownyouns, cayenne pepper and Tobasco sauce plus whatever dead animal was on the menu and simmer for 12 hours.
