Half decent restaurants have their own bakers. I have two friends who are in the direct sales of "gourmet" baked goods to restaurants in Dallas and they are always complaining about the small orders (and tough collections problems) they face. The wedding cake business can be much more profitable. To top it off, there is a huge amount of competition in Dallas from established "high-end" bakeries.
