Coby's right- they're dried beans, only I thought you just hung them up whole on a string and dried them; I guess they're called that because they look like a string of little leather pants hanging there. THey keep forever. My SOuthern Appalachian Mountain Cookin' Book calls them "Leather Breeches."
THen you cook them up all day in a big ol' iron pot with a big ol' chunk of salt pork til they're all soggy and pale. Serve 'em up with your corn pone, and mmmm-mmm.
