Your data might not be unrecoverable -- don't forget about programs like PowerQuest's (although you might not be feeling totally confident with their products about now) Lost & Found. I used it successfully (thanks to ZP for the suggestion) on a partition that I mistakenly formatted. (Although, I did have a glitch: After recovering my data I deleted that partition and subsequently lost access to the exact amount of space of which that partition was comprised. PowerQuest said that such a phenomenon was not "an issue" with L&F -- what was I to say?)

I think that L&F has to operate within the context of a partition so it may not work for you if your partitions are gone. You may want to give PQ a call.
