Andouille is so good. Garlicky, and made with ham. I was reading a book at Border's, by John Thorne, half of it is about his obsession with Cajun cooking, didn't buy it, but he did give three sources for mail-order andouille, and said they were all good. I think I have a recipe for making home-made andouille, probably a bunch of them. I collect cookbooks. Never made home-made sausage, but it looks easy enough.
