I'm guessing you closed a Quote Sheet display in the workspace and lost all the symbols you entered. There are two ways to prevent this - save your workspace to disk when you make changes to it - you can give it any name you like. Then if you make a mistake and mess with the layout in a way you didn't intend (like deleting a carefully-designed display) you can always retrieve the saved version from disk.

Another way to hedge against this type of loss is to use the Export Symbols command in the Quote Sheet menu. If you delete this quote sheet you can always create a new one with File - New > Quote Sheet and then use the Import Symbols command to load in your saved symbol list.
