Is it correct that Q is planning to continue producing the older models ie QCP2700 etc, but with new the chipsets?

Yes, in one of the recent CC's they made reference to the fact that they were in the process of now producing the older phones with the newer chipsets. They didn't mention exactly which lines they would be continuing in production, but it is a good guess that the 2700 will continue at least until the they come out with a 2760 (thin phone with PCS and AMPS).

And will these larger models have longer talk/standby times than ThinP with internal battery?

Presumably - it would be interesting to see what the new specs are, but I haven't seen them.
