Husband says we either ate lizard or rattlesnake at the Jazz Fest one time. I think it was rattlesnake. Louisiana lizards are gekkos, but we do grow big rattlers. I remember the alligator better, that tastes like beef, very stringy and greasy. It makes good sausage, or you can just boil the tail meat like you would make boiled beef. Cajuns will eat anything, that's why we are such good lovers.
