Gas or charcoal....the million dollar question. Although it is possible to fool a restaurant patron with a gas grill I personally prefer Royal Oak or some of the other popular brands.

It is sinful in the south unless you continually add wet hickory or some other wet hardwood to your coals as you cook. Ribs can cook 5 or 6 hours on the cool side of a elongated grill and will make you very happy.

Sauce is done over the coals about the last 45 minutes.......

Yummy!

What is the deal here? I get a PM from Vendit to visit a new BBQ thread and all I hear is beef, ribeyes, filets, etc. Where are you "dudes" from? BBQ is hog...pork...pigs baby..white meat (will accept anything that "tastes like chicken", rattlers...crow sounded ok ...maybe oysters.....but BEEF...NEVER, not, nix, no way Jose'
