HI JIM: Was away on a trip, or would have replied sooner. I have hunted some, and even in Hawaii, we have mouflon sheep, axis deer, blacktail deer, wild boar, pheasant, frankolin,california quail, etc on the outer islands (all imported years ago & proliferate without natural enemies). But years back hunted in Canada, Caribou, Moose, Black Bear. I liked the Moose, except for the backpacking the meat out of the wilderness! Elk is one of my favorites, but I don't know if you know the reference: One of the famous hunting & shooting writers in the lower 48 states, Jack O'Connor flatly stated that the very best meat, wild or domestic, was Bighorn Sheep. I remembered that as he gathered a lot of big game during his lifetime, and had a reputation for intregity. Now, a few years back, we went ( a party of hunters) went on a bighorn sheep hunt (Mouflon Sheep) and bagged two. I want to unequivically say that it was the best tasting meat, wild or domestic I had ever tasted!! Period. I agree with the famed writer. I had never tasted any meat that good, it was in a class by itself. My input experience...good hunting! Best Wishes, TOM
