What kind of insurance will cover the delivery from a vendor when the vendor goes bankrupt?

I'm not in the industry, but I would guess that a company could purchase insurance to limit losses of this magnitude. Kindof like farmers can purchase crop insurance. Perhaps something similar to insurance could have been accomplished by purchasing way out of the money calls that strike if electricity prices spike to a very high level? I don't know that such a product exists, but I see a market for such a product.
