I trim a lot of the fat, then parboil. Don't dump that water down your sink or you'll need a plumber. A lot more fat can be scraped off. Then I pierce them with a fork. I use a big Weber with a small fire on one side and put the ribs on the far side and smoke them with wet hickory chips on the fire. I usually give them about 30 minutes of smoke. Then another 1 1/2 hours with a cool fire putting the sauce on in the last 1/2 hour. Cooking times vary with how much I'm drinking that night.
