Na, you don't have to worry about adding water...between the meat "sweating" and the fat(even if you try to get much of it off) dripping, it cooks in its own juices. I have literally turned ribs into boneless ribs by leaving them to steam a little too long.....the rib bones can end up pulling out when you go to grab the meat.

I would never parboil again.....too much mess.
