That's the key -- poverty. When I was a kid and we butchered hogs the owner of the hog got the pick of the meat (like "backbone"), the owner of the killing field got certain pieces as agreed. The sausage (which smoked lasted pretty well) went to the owner, the liver pudding (which spoiled quickly) was divided among everyone there. The chitlins (intestines) unneeded for sausage and blood pudding casings, went to the black laborer or anyone who wanted them. Soon, only the pig tail was left, and was about to be thrown to the dogs -- a little girl said "Me likum little pigtails." I married that girl.
