My wife created hundreds of hybrid viruses previously unknown to science in the early 1960's by matching various RNA nuclei (e.g. TobMV and TomMV) with alternative protein jackets. These were laboratory curiosities, of course. But they shared various "behaviors" or activities of their RNA and coats. Her PI got permission of the Pope to create new kinds of life. In the next lab, a man (who later was Nobel laureate) was showing how viruses might cause cancer and others were proving the first structures of proteins. Heady days. Almost everybody scoffed.

X speciation is just one part of the theory of evolution. What has been observed in laboratory settings is random mutation and selection. In addition, there is a huge body of evidence showing a correlation of the accumulation of point mutations -- specifically amino acid substitutions in proteins that correlate quite well with the time of divergence of species and selective constraints.

In addition, the evolution of bacterial resistance to antibiotics and the evolution of viral coat proteins has been well-studied.

Evolution is by definition a result of natural processes This is incorrect. Evolution is simply the change in organisms over time. The changes may be man-made (as in the case of breeds of dogs and cats), or natural. Darwin proposed that evolution proceeded through a process of natural selection -- survival of the fittest -- in response to environmental changes.
