Actually, it wasn't only the port that did it. The Port and the bourbon mixed with the soy sauce and the combo permeated and coated the steak and onions and just quietly gurgled to itself. But the food was really hot because I used a very heavy cast iron skillet with the range on maximum to sear the steak. So then, you see, when I poured the brandy on top and lit it, the flames were really attracted to the port-caramelized walls..... Oh, I should add, I suppose, that this happened around midnight in a studio apartment with only one partially-openable window on the ninth floor in midtown Manhattan. So I opened the apartment door, causing this delightfully billowing aroma to waft down the hallway and just because the smoke detectors in my apartment weren't working.......
