A tapioca pudding that is light and not very sweet sounds like the recipe where egg yolks are cooked in the custard, and then folded into the beaten egg whites after it has slightly cooled. I believe the tapioca box calls this FLUFFY tapioca, as opposed to the CREAMY kind, but I cannot be sure because I am out of tapioca at the moment.

I will do an experiment at some point, because coffee tapioca sounds delicious!

Joan, I looked on the web and did not find any coffee tapioca pudding. However, I did find this beautifully presented recipe for maple tapioca pudding:

It has the advantage, of course, of using maple syrup instead of processed sugar, so it is arguably more healthful. It would be an elegant winter dessert, served in lovely dishes with dollops of whipped cream sprinkled with finely chopped roasted nuts. A brown autumn leaf could even garnish the whole thing!

I am sure this would not serve 4-6 people in my family, however!
