1) I prefer to use a egg based noodle, like linuine or the fresh Chinese noodles.

2) 1 part SESEME PASTE

3) 2 parts PEANUT BUTTER

4) 1 part crushed/finely chopped GARLIC. Soak in 1 part warm water

5) 1/2 part DOUBLE BLACK SOY SAUCE

6) 2 parts SUGAR, BROWN or WHITE

7) 1/2 part SESEME OIL

8) SALT/PEPPER/SZECHUAN STYLE CHILLI SAUCE - to taste

9) GARNISH: julliene carrots/cucumbers, chopped scallions

10) if you want that extra TANG, a little vinegar to taste.

First thin out the seseme paste, which will take awhile since it is so thick. Then add the peanut butter in and thin it out with the soy sauce/garlic water. The proper thickness of the cold noodle sauce is about the same as pancake batter.
