Any other strategies that would take advantage of an increase in the VIX?

Have you looked into volatility skewing? Can be very effective with neutral strategies. Don't do them myself so I don't feel comfortable giving specific recommendations but strategy is sound.
Doing calendar spreads may also accomplish what you are looking for. The short option close to expiration won't rise as fast as the long option for increase in VIX.
