There could be world-economy farming exhibits: "It takes this much to feed a human." Sewage processing (My favorite!). Subterranean MagRail Hub. Sure. The Five Billion Butterflies Exhibit. Tissues. Hums. Growth on the Upper Floors would continue; Continuous Construction. (Kind of complicated roof flashing; so we'll leave that to Dash.) Pancakes would be square. Duh. How many humans, head to head and toe to toe, does it take to reach the moon?
