I'd simply rewrite it along the following lines, E:

"....have a wonderful example of lousy writing to take back to my students to see whether they can 1) understand it, and 2) rewrite it in good English."

Personally, I don't have a problem with "it," the antecedent of which is clearly "example of lousy writing." And I wouldn't say the sentence as it stands is "incorrect," although I am not happy with the absence of "to" before "ask."
