Yes, I believe demeanor has very little to do with credibility. Every individual is unique. In addition to cultural differences between ethnic groups, individuals have a wide variety of personality traits - degrees of introversion / extroversion, for example. Individuals differ widely in the ways they experience and express emotions like fear and anger. Individuals also have the ability to fake reactions and virtually everyone does at times. The best liars are those who are able to judge the reaction people expect to be associated with truthfulness and act accordingly. I've been lied to a lot while being looked straight in the eye. I know other people who seldom look one straight in the eye no matter what they're saying.

The idea that one can judge truthfulness by demeanor is a common illusion. There are signs of lying but they are quite subtle - i.e. fleeting micro-expressions, variation from the normal means of expression.
