Jasmine rice, like basmati, is what they call a perfumed rice. Cooks up light, dry and fragrant. Popular in Thai cuisine. I get 20-lb sacks from Costco, in a white bag. They sell the basmati in a burlap bag, and it tastes like burlap. There is a frustrated chef at the courthouse cafeteria, for a while he was out in the eating area making things to order, like stir-fry, pick your own ingredients and he'd cook it to taste. That went on for a while, but the regulars (deputies ~ male, and clerks ~ female)and the jurors pretty much stuck with the overcooked pizza, dried out hamburgers, and the fries and overcooked vegetables. Sometimes he'll burst out with something unusual, but it gets passed over. He'll stand by the steam table, in his toque, watching what people select, with the pique of a frustrated artist on his brow. "Peasants!" is what he's thinking, most likely.
