Globalstar global coverage?

You are absolutely right.
Those who are located between 25 and 55 seems to
get the best signal with 2-4 satellites in sight.

The coverage south and north of 70 lat. it will be
limited to 1 satellite with 100% service but
probably 2-3 satellites with less availability.

My experience with Inmarsat Mini M is that it can
Easily be used north to 75 degrees lat.
The design limits are though set at no more than 70
degrees.
Still it works!

I see no signs that G* should not work beyond the 70
degree limit.
My prediction is that a fixed installation unit
with higher power and large antenna should work
even beyond 74 degrees.

The population and traffic beyond that is extremely
limited.
The only real business might be flights across the north
pole.

The main problem with G* and Inmarsat is not the pole coverage, but he fact that the elevation angle of satellites will become so low in places like Murmansk or Bergen Norway that handsets become almost useless in satellite mode unless you climb up in the next tree or mountain.
The funny thing about this all is though that the Iridium experience(sporting the famous polar orbiting satellite)
is no better.
The Irid satellites seems to have so low output power that trees or reflections in narrow fjords block all signals.
If the G* engineers had designed their system with 70 degrees inclination and more satellites at each plane, customers in northern latitudes would not have had a second thought on what system to choose.

Regarding the phones for Santa I am affraid that he will
not select G* because he is from Finland.
The finnish phonemaker is the only company to offer
a phone capable of playing Christmas songs while the
package rings under the tree.
