People just choose not to think! Any valid religious system must assume that God is the Author of all Truth. If that is the case, then truth is truth regardless where one finds it. Whether in the Bible, test tube, archeological digs, or in outer space. To deny evolution is to deny the closest thing we have currently to the truth about creation.

That is a good point. You should note that the Church eventually did pardon Galileo, although a few centuries after the fact. The fact that it can be disproved is what makes evolution different from creationism. No evidence could be presented to refute a creationist view. However, bring me a fossilized Tyrannosaur with a gerbil in its ribcage, and I'll gladly repent my belief in evolution. That's why creation is a religeon and evolution is a science.
