Well, if you don't believe in the literal interpretation of Genesis, how can you believe in the literal interpretation of the entire Bible? If Genesis and original sin are really symbolic, couldn't the God of the Bible be symbolic as well then. Maybe "God" is really just the good in all of us. And, also, Jesus could be a symbolic creation of what we should act like, even though he said he was God (I do disagree with both of these assumptions of pantheism and Jesus being just a symbolic man by the way). You're arguments just don't hold very much water, I'm sorry to say. It's either literal or not, and if it isn't literal, why should we believe in a God in the first place?
