There is a ton of evidence for gravity, so it's accepted as a fact. There are theories explaining it. Einstein said it's a warping of space that we think it three-dimensions. Strings theory says that there are 10 dimensions and everything is composed of resonating "strings" of energy. Intuitively, it's difficult to accept warped space or 10 dimensions, but something like this is needed to construct a model supported by the evidence.

There is a ton of evidence for evolution, so it's accepted as a fact. There are theories about it. Mechanisms supporting it have been uncovered such as DNA with associated evidence as "junk" DNA shared between humans and apes. It may be difficult to intuitively accept this. It may disagree with our political or religious preconceptions, but the evidence does support evolution as fact.
