If you buy "fresh" shrimp that have a pinkish cast to them that is probably also formaldehyde. I live where they do shrimping, and some of the unscrupulous fish houses use it as a preservative. There are several species of shrimp around here. They are brownish or whitish when fresh, but not pink. Red legs are OK. I am talking about the meat.

When I first moved here and ate really fresh shrimp, I thought something was wrong, because they tasted sweet, and not like the shrimp that I was used to. I guess that I was used to those stinky cheap ones.

The funny thing is that if you by the shrimp flavored ramen noodles, they flavor them with the "stinky shrimp" flavor that most of the country is used to.
