I don't have a microwave. My kitchen, alas, is the size of a man's handkerchief. I live in a studio apartment. When I make pastry or pasta, I have to resort to my dining table--LOL! It was a choice between the microwave and the food processor; after years of mincing by hand for dinners following wine tastings for more than twenty people, the food processor took precedence.

I steam the broccoli. When you have a gas stove, it makes all the difference in terms of cooking in terms of the persistence of heat. The first time I cooked with an electric stove, I found myself relearning cooking. Now that the thermostat is shot on my stove, I have reverted to the years when the chef stuck his hand in the oven to be sure (thermometers notwithstanding) of the temperature. I understand all too well why soufflées were such a special challenge years ago--I face that challenge now and have mastered it.

Hey, I'm ready for the Y2K scares. I know how to cook on a wood stove; sew; tan leather; make cheese from the cow or goat you know how to milk; smoke the meat from the animal one has shot the old fashioned way, with green wood chips; make tallow from the fat and then make candles; and am a dead shot.

I may sound urban as hell--and I am--but I am also an historian with a lively interest in how people lived at different times. Alas, I am not as good as I should like to be with a bow and arrows! OTOH, hand, don't try fencing with me: That was one of my joys in college!
