I like my salsa fresh with about a 3 to 1 ratio of tomatoes to yellow onion. I dice them with a really sharp chef's knife and slice the onion as thin as I can before dicing. One clove of garlic thinly diced. Then a nice wad of cilantro. I fold the top in half to make it easier to chop. Then the juice of a lime a bit of sugar and salt to taste. You can put in a bit of pepper, too. I have used cerano, but I don't anymore because I get bee-stung lips.

I have tried to use a food processor, but it seems to get too mushy and bitter. I usually just eat it as a dip for Doritos.

Have you ever frozen your tomatoes whole, in a baggie, rather than canning? Much faster, and when you have a recipe that calls for canned tomatoes, just run a couple under water for a second, and the skin will slip right off. Throw in the pot, and you can dip the core out after it all melts. We just made some chili like that, and it was great.

Neeny, here is a really simple fresh salsa we like.

Fresh tomatoes (slice and dice but not too too small)
Yellow onion (chopped into smallish bits)
Unseasoned rice vinegar to taste
Salt to taste
Fresh ground black pepper (a little)
Finely diced (minced?) hot peppers to taste
TIME FOR CAT POO PEOPLE TO CLOSE THEIR EYES!
Lots of finely chopped fresh cilantro

I never know the exact proportions and they probably change with my mood and flavor strength/variation of the ingredients.

I start with a small batch and adjust the mix to taste as it becomes larger. This is great on all kinds of food. Fresher the better, IMO.

BTW, for different fresh salsa that is excellent with fish, try this (no tomatoes)

Seedless grapes (quartered)
Fresh pineapple (all fruits roughly size of the grape bits)
Cantaloupe
Honeydew Melon
Yellow onion
Unseasoned rice vinegar
Ground cumin to taste (little goes a long way)
Finely diced fresh jalapeno
Finely chopped cilantro to taste
Dash of S&P
