I've never had a striper from saltwater but I've caught several that were stocked in fresh water. It's important to remove all the red meat before cooking. What's odd is one year we got into stripers that were feeding on gizzard shad. No wrong way to cook them. Skillet, grill, broiler, it didn't matter they were sweet and mild. Since then all I've run into are stripers that are feeding threadfin shad and I'd have to be awfully hungry to eat one. Strong and nasty.
