My dad had a friend who was a butcher in Chicago when it was the slaughter house #1 in the world. My dad and his friend were exactually the same size and my dad was in the clothing business. My dad wore suits that would cost $2,000 today. He'd wear them 10 times and trade them for the best beef out of Chicago. The butcher'd bring down sides and custom cut them. And we owned a farm. Had a feed lot. Pick a good steer and feed it out. Pet it and eat it. Yummy beef.
