Hi Annette,

You're talkin to the right person. I did some commercial fishing here a few years back and also worked for a fish brokerage house many years back.

Onaga is the Red Snapper. Very Hot. Quite expensive. At New Years it is a tradition with many folks here to have a great big one as the center piece of their New Years meal. They are caught in waters approaching 300 feet. Most restraunts can't keep enough Onaga in stock. It's also funny you should bring this up now. A visitor here, who just went on a bottom fishing trip gave me a bag with 4 good sized Opakapaka in it last night. I cleaned them up and had some of 'em for lunch today! Next to Onaga, Opakapaka is the most desireable bottom fish in the Islands, followed by Uku or Grey Snapper.
