I believe that the ethnicity is determined by comparing mitochondrial DNA, there are markers which have different frequencies of expression in different localities. I think this can only be done with flesh, so the mummies can be tested because their flesh was preserved. If an unknown person's mitochondrial DNA has more markers in common with a known person whose ancestors as far back as are knowable lived in, say, Italy, than say, China, statistically speaking the unknown person is more likely to be Italian than Chinese. But the show was a bit sketchy on the science, it did present a lot of information in an hour, none of it in much depth. There was a bit about Dr. Good, the textile specialist I'd posted about before, and some demonstration of the computer technology she uses to enhance the textiles.

But if your larger point is that it's chauvinistic of me to be more interested in mummies that have blonde and red wavy hair and prominent noses than mummies that have black straight hair and flat noses, yes, it's true, and I can't explain it, except to say that I've got wavy hair that used to be dark reddish brown, and my nose is more prominent than flat.
