One year I had 40 pounds of salmon filets and a friend and I tried butchering a hog. Not only tried but did a damn fine job of it. A 360 pound Hampshire. For the bacon, ham and the fish we found a cure from the 1800s. Then cold smoked them for two weeks. Rich like in eat too much and you get the green apple quick steps but the fish, one itty bitty piece kept for a test, was still good after 3 months on the counter wrapped in foil.
