Neocon,
I nominate Luther Burbank and many others whose work led to the incredibly productive domestic plants and animals and the modern techniques of raising them that is one of this century's greatest achievements. ~2% of this country's population is directly involved in producing agricultural products now. In 1900 that figure was well north of 50%.

The improvement in yields of corn, wheat, soybeans and rice alone have made it possible to support 6 billion people without plowing up every piece of arable land on the planet.

Those currently working on gentically modified plants and animals should be high on the list for 2100 because they will make it possible to support the 12 or 20 or ? billion people that are around then.

Separately, Henry Ford belongs on any list for this century.
