Some British Jews were of Sephardic descent, some of Ashkenazi descent. The first wave of Jews in the United States were Sephardic, like Emma Lazarus, a native New Yorker who wrote the poem for the Statue of Liberty. The second wave of Jewish immigration, in the mid- 19th century, was mostly Ashkenazi, although from Germany, and mostly assimilated and Middle Class. They were the ones who established a lot of the early department stores and Wall Street concerns, like Goldman Sachs. The third, and largest, wave was Ashkenazi from Eastern Europe. These are the people North Americans primarily think of as Jews. They spoke Yiddish, were either highly religious or political radicals, and they ate the cuisine of the region. Most of the things that are thought of as "Jewish delicatessen" were of Russian or Scandinavian derivation, like borscht and smoked fish, although sometimes with a twist.....
