I don't dispute she was a good artist and that she formed a bridge from folk to rock/pop, as did several others. I'm sure those records are exquisitely done. Where is the lasting influence?

Like you - I love Joni - LOVE Blue. Global influence - not much, if any. Jimmy Buffet has had more active musical role than Joni. She is brilliant but very passive - the Madonna of self-absorption .

I would remove from list nearly all in "entertainment". MAYBE Disney and the Beatles were really influential. Elvis is a temptation (no, not one of THOSE Temptations!) but basically a performer.
