To delete a bunch of symbols from a quote sheet simply select the first in a series of rows that you want to delete, press and hold down the delete key and it will chomp all the rows below it till you release the Del key.

Or, you can Export the symbols in the quote sheet to a text file, use a text editor to remove the symbols you don't want, and then use Import Symbols command to import the edited file into a new quote sheet.
